We are looking for a Greek Head Chef to lead a restaurant concept inspired by the bold, fresh, and authentic flavours of Greece. This is your opportunity to take the helm of a kitchen that celebrates Mediterranean heritage while delivering a contemporary, elevated dining experience within an iconic international hotel brand. You will own the kitchen's full operation — from menu creation and team leadership to quality, consistency, and food safety.

Job Role

  • Lead the full Greek kitchen operation, overseeing daily preparation, live service, and kitchen administration
  • Design, develop, and execute authentic Greek menus with a modern Hard Rock twist
  • Standardise recipes to ensure consistency in taste, quality, and presentation across all dishes
  • Recruit, train, and lead a high-performing kitchen team, fostering a culture of passion, discipline, and creativity
  • Monitor food costs, control waste, and drive efficiency while maintaining premium quality
  • Ensure full compliance with HACCP, food safety, and hygiene standards at all times
  • Collaborate closely with the Executive Chef and F&B leadership on concept development, seasonal menus, and events
  • Oversee sourcing of fresh and specialty Greek ingredients, building strong supplier relationships
  • Manage stock levels, kitchen equipment, cleanliness, and maintenance
  • Deliver exceptional guest satisfaction through attention to detail, speed of service, and culinary excellence

Requirements

  • Minimum 3 years' experience as a Head Chef or Sous Chef specialising in Greek or Mediterranean cuisine
  • Strong knowledge of traditional Greek dishes, including mezze, grilled meats and seafood, bakery items, and desserts
  • Culinary qualification or formal kitchen training preferred
  • Experience in luxury hotels, lifestyle brands, or high-volume premium restaurants
  • Proven leadership and team development skills
  • Solid understanding of kitchen costing, menu engineering, and ingredient sourcing
  • Passion for authenticity, presentation, and bold Mediterranean flavours
  • Flexible availability, including weekends and public holidays
