Company Description Terrone Malta is a seasonal Mediterranean restaurant located on the Birgu waterfront at Fort St Angelo, offering a dynamic dining experience in a historic setting. The kitchen team builds a daily-changing menu around the freshest wild fish, local seafood, game, meat, and peak-season produce. Head Waiter — TerroneBirgu, Malta | Full-time
Terrone is looking for an experienced Head Waiter to join our team at Fort St Angelo, overlooking the Birgu waterfront.
Our daily changing menu focuses on wild fish, seafood and seasonal Mediterranean produce. We are looking for someone who takes pride in warm, attentive service and can confidently lead the floor.
Your role
• Lead service and support the front-of-house team, ensuring every guest feels well looked after.
• Manage your section confidently while overseeing the pace and coordination of service.
• Develop a thorough understanding of our changing menu, ingredients, preparation methods and wine list.
• Guide guests through the menu and offer thoughtful food and wine recommendations.
• Communicate dietary requirements and allergies clearly with the kitchen.
• Oversee table preparation, opening and closing duties, and restaurant presentation.
• Handle guest requests and concerns professionally.
• Support staff training and work closely with management and the kitchen team. What we’re looking for
• Previous experience as a Head Waiter or in a senior restaurant service role.
• Strong food and wine knowledge, with a willingness to keep learning.
• Confident leadership, clear communication and attention to detail.
• A calm, organised approach during busy services.
• Fluent spoken English.
• Availability to work lunches, evenings, weekends and public holidays.
